Lemon Garlic Roasted Chicken with Red Potatoes and Green Beans
6 tablespoons of olive oil
4 cloves of garlic minced
1 teaspoon of salt
1 1/2 teaspoon of pepper
3 lemons, 2 juiced, 1 sliced thinly.
1.25 pounds of chicken
Mix all ingredients above in shallow bowl. Marinate over night.
Preheat oven to 450 degrees.
8 red potatoes
1 cup of green beans.
Grease bottom of oven safe pan with olive oil. Pour chicken with marinade into pan. Quarter potatoes and trim green beans. Using a tong, mix the chicken, potatoes, and green beans. Then place the green beans and potatoes on the bottom of the pan. Place chicken onto of the beans and potatoes. Bake for 1 hour.
Side note: the only thing I would change is marinating the green beans and potatoes. They didn’t absorb much flavor. Id make extra marinade and let the green beans and potatoes soak in them for a few hours to try and enhance the flavor.
