Fish Fry
Mmm this was yummy! I prefer the redfish over trout, it’s a whiter and cleaner meat than trout. The batter is super yummy too! Because it’s cornmeal based not flour, it makes your fish super crispy! Yummmmy!
3 red fish fillets
3 trout fillets
2 eggs
2 splashes of milk
Salt
Pepper
2 lemons
3 cups of St. Pierre fish fry (this fish fry is pricey, $8 for one container, it’s more of a corn meal base than flour like zatarains)
Lemon pepper seasoning
3 cups of oil for frying
Cut fillets into 2 inch sections. On the plate it’s on, squeeze two lemons over all of the fish, flipping both sides. Season with lemon pepper, both sides.
Make egg wash. Egg and milk, add salt and pepper.
Dip fish into egg wash, then into batter.
Fry in oil. Fry until golden brown on each side
