Basically, we have NOTHING in the house! As I was doing my homework I was like ok I have all morning/day free with no work. I need to cook!!! I have got to stop eating out so much !! But we have nothing. So I basically just threw this together. Hopefully it tastes yummy because it’s all we had in the house!
Tomato Wine Pesto Chicken
2 boneless chicken breasts
1/2 cup of Chablis cooking wine
2 cans of petite diced tomatoes
4 ounces of basil pesto (I use Classico traditional basil pesto from Target)
4 cloves of garlic
1 tablespoon of oregano and basil
2 small bay leaves
Salt and pepper
I threw my chicken in frozen. Place all ingredients in crock pot. Cook on high 5 hours. About an hour left, I cut my chicken up to let the pieces of meat absorb the flavor.It did come out good. My brother whose super picky even wanted some and he doesn’t eat stuff like this. I decided to serve mine over whole wheat pasta. I figured since I went to the gym today I could eat some carbs ;) !
