Pepper Jack and Spinach Stuffed Chicken
4 boneless chicken breasts, cut in half.
8 ounces of pepper jack cheese (I bought a block and grated it myself)
6 ounces of frozen spinach, washed, cut, and drained.
Preheat oven to 400.
Cut chicken in half, so it’s about 1/4th inch thick.
Sprinkle Cajun seasonings over chicken.
Combine about 3/4ths of cheese and spinach together in bowl.
Spread in center of chicken. Roll tightly. Place a tooth pick through chicken to hold together.
Spray an oven safe dish with Pam. Place chicken in pan.
Bake 40 minutes
