Bored out of my mind because we are waiting for the arrival of Isaac, I decided I might as well cook some of my meat from the freezer because who knows how long we will have a power outage. I didnt have ground beef, so I decided to cook all of my chicken. I mean it wasn’t a lot, I only had 3 boneless breasts left. I also wanted to use up my marinades in the fridge and pesto so those wouldn’t go bad either. So I kind of just made this up based off of what was in the house that should be cooked before Isaac comes in a few hours! 

Chicken in Red Gravy: 

Chicken:
3 boneless chicken breasts 
1/2 bottle of lawrys garlic and herb marinade
1 spoonful of pesto 

Marinate minimum 30 minutes. I didn’t marinate mine as long as I normally do because hurricane isaac is on its ways. I didn’t want my chicken to not be cooked in time before the electricity went out. (unfortunately, we have an electric stove. I HATE cooking on electric, I cook a lot better with gas, so once the power goes out, we can only rely on the BBQ pit and I do not want to put my brand new pots and pans on a BBQ pit!!!!) I highly recommend marinating it over night, the flavor is just so much better!!!


In pan, sauté chicken until done. 

While chicken is cooking, make pasta and red sauce. 

Red gravy sauce: 
1 bottle (42 ounce/2lb) Onion Garlic Tomato Ragu
2 tablespoons of pesto 
2 tablespoons of sugar (I love adding sugar to my red gravy!! It’s the only way I’ll take it!)

Simmer all ingredients together for 30 minutes. Ragu isn’t a long simmering tomato sauce, it’s pre cooked, but I find the longer it simmers with additional ingredients the more flavor you will get. 

Cook pasta according to package.
