I have never been a fan of red beans and rice. It’s a creole staple. I figured, if I cook it on my own and control the ingredients that go in it, then I should love it! And I do. It came out really good!
Crockpot Red Beans and Rice
1 pound of red kidney beans
1 pound of Richards andouille sausage
2 cups of Guidry’s creole seasoning cuts
1 green pepper chopped
1 red pepper chopped
3 cloves of garlic chopped
1 box of zatarains red bean seasoning mix
3 bay leaves
1 tablespoon of creole seasoning
1 teaspoon of oregano, thyme, and cayenne pepper
Add a few dashes of hot sauce and Worcesterchire sauce (don’t go crazy with the hot sauce!!)
7 cups of water
Sort your beans taking out the halves or pieces and check for small rocks or pebbles.
Rinse the beans thoroughly and pour into crock pot
Slice the sausage into bite size pieces and place in crockpot.
Add all of the vegetables into the crock pot.
Stir and cover on low for 12 hours
Serve with hot rice
