Cajun Stuffed Green Peppers
2 boxes of Zatarains Dirty Rice Mix 
6 large green bell peppers
2 large onions diced
2 tsp. + 1 tsp. olive oil
1 pound of ground meat
12 ounces of frozen small shrimp
salt and fresh ground black pepper to taste
1/4 cup grated mozzarella cheese

Preheat oven to 375F.  

Cut off a fairly generous amount of the stem end of peppers, then remove seeds. Don’t throw away the tops! We will be chopping these up later!  

Place hollowed-out peppers in a baking dish that you’ve sprayed with non-stick spray. 

Dice the pepper tops and the onion into fairly small dice. 

Cook rice according to package directions.

In a skillet, heat 1 table spoon of olive oil. Brown meat. Then drain in a colander and place shrimp in the heated pan and cook shrimp. Once the shrimp is done, you can combine the beef and shrimp. 

Heat 2 tsp. olive oil in a large skillet, then saute diced pepper and onion. For about 5 minutes. 

In the skillet, combine the meat and onion/pepper mixture. Then add cooked rice. season the mixture with salt and fresh ground black pepper to taste. 

Stuff the filling mixture into the peppers, using a spoon to press the mixture down so it’s tightly packed. 

 I had extra filling!! But that’s fine, I have lunch for tomorrow! 

Bake peppers for 45 minutes, then remove from oven and put a generous pinch of grated mozzarella on top of each pepper.

 Put peppers back into the oven and bake about 10-15 minutes more, until cheese is melted and lightly browned. 

Serve immediately!
