Dinner from last week!! Only 4 weight watcher points per 8 ounces. YUMMMM! Problem is, I could eat the whole pot on one sitting !! I fell in love with minestrone soup from Olive Garden, I find the recipe way better!
2 cups of Guidrys fresh cuts (onions, celery, green onions, garlic)
1/2 pound of frozen green beans
4 ounces of carrots (shredded)
2 large cans of diced tomatoes
2 cans of kidney beans
1 can of navy beans
8 cups (64 ounces) of vegetable broth
1 cup of shell noodles
handful of spinach leaves
3 bay leaves
2 tablespoons of basil
1 tablespoon of oregano
1/2 tablespoon of thyme
Salt pepper
Sauté guidrys cuts. Add green beans. Sauté. Add carrots, sauté.
Add tomatoes, canned beans, and vegetable broth. Add seasonings. Simmer 1 hour.
Add noodles and spinach leaves. Cook about 20 minutes longer.
